原料
中筋麵粉 200g, 蕎麥粉 200g, 速發乾酵母 4g, 溫水 220g, 蘿蔔乾 100g, 咸酸菜 100g, 肉末 100g, 干紅辣椒 10g, 生抽 1茶匙, 姜 5g, 蔥花 1根, 雞粉 少許
步驟
1在面盆中將麵粉與蕎麥粉拌勻

2加入用溫水溶解的酵母,攪拌後適量添加溫水,直至將麵糰揉光滑。蓋上保鮮膜,醒發15分鐘

3將醒發好的麵糰分成若干等份,並搓成圓形

4用大拇指頂住麵糰的中間轉圈,轉成窩頭狀

5依次將麵糰做成窩頭後放入蒸籠,窩頭之間留有距離擺好,蒸籠放沸水鍋上蒸15分鐘即可

6將蘿蔔乾、咸酸菜切成丁,肉剁成碎末,干辣椒切碎,姜、蔥切末

7炒鍋倒入適量油燒熱,加入蔥、薑末、干辣椒爆香

8加入肉末翻炒至變色

10加入少量水,翻炒至水份快乾時,加入生抽、雞粉調味,吃時將炒好的外婆菜夾入蒸好的窩頭中即可
