昨晚的晚餐還是投老郭所好,我包了韭菜鮮肉餡的餃子,我以前說過,我婆婆的拿手好戲一為炸醬麵,還有一個便是韭菜鮮肉餡的餃子,我們一家三口都百吃不厭!跟婆婆學過多次不得其精髓,突然想起前陣子洋洋參加KET考試前我問他:「你胸有成竹了吧?」他回:「還行吧,有半根!」於是,借用過來吧,我這餃子得一半我婆婆的精髓吧!
原料
餃子粉 600克, 鹽 少許, 清水 適量, 豬肉末 400克, 韭菜 100克, 蝦皮 20克, 蝦仁 100克, 雞蛋 2個, 姜 適量, 鹽 適量, 醬油 適量, 料酒 適量, 雞精 適量, 糖 適量, 香油 適量
步驟
1將少許鹽(加鹽是為了讓餃皮更加筋道)加入麵粉,拌勻,緩緩倒入清水,一邊倒一邊用筷子順一個方向將面拌成大雪花狀

2再揉成麵糰,蓋上濕布醒發(這會兒開始和餡)

3將醒發好的麵糰分別擀成長條、切成劑

4壓扁

5擀成中間厚四邊薄的餃子皮

6包入適量的餡

7先將兩頭的餃皮於中間捏合後

8再於兩邊分別打褶,成形

9大鍋內做水,水開後下入餃子,蓋上蓋煮至開鍋,激入涼水,再蓋上蓋,如此反覆三次,開蓋再略一會兒,即可撈出裝盤

10取炒鍋,倒入油,三成熱時放入蝦皮,中火將其煸至酥脆,取出,切碎

11在肉末中加入薑末、鹽、醬油、料酒、雞精、糖,分次加入少量的水,順一個方向用筷子攪拌至黏稠

12將蝦仁改刀成大粒
