原料
原味飞饼(甜): 5张, 糖粉: 40g, 淡奶油: 110g, 牛奶: 80g, 蛋黄: 2个, 低筋面粉: 8g, 炼乳: 8g, 木瓜: 适量
步骤
1木瓜先去皮去籽,切成丁备用;

2盘里倒入淡奶油,牛奶,细砂糖,炼乳,搅拌至糖完全溶化;

3加入鸡蛋黄和低粉,搅拌均匀;

4把3过筛即成蛋挞水,放一旁备用;

5飞饼提前拿出来解冻,软身后把飞饼卷起来,如图;

6对半切开,一分为二,然后竖起来用手按扁成圆形;

7如图,把所有飞饼都如此处理好;

8把挞皮其中一面沾上一点面粉,朝上,用拇指把挞皮一个一个的都移至挞模里捏好;

9飞饼加热后膨胀得厉害,可以静置10分钟后再用叉子在底部叉两下再放上两块木瓜丁;

10加入约七分满的蛋挞水,入预热好的烤箱,210度,约25分钟左右;

小技巧
飞饼我一分为二,5个飞饼做了10个蛋挞,皮感觉有点厚了,其实一分为三也是可以的,皮薄些,挞水多些,更好吃啊!
