中筋面粉: 220g, 温水: 100g, 酵母: 3g, 糖: 10g, 精盐: 1g, 葱: 1棵, 油: 适量

1准备材料~

2葱切末,油盐量好~

3将糖,酵母,温水(和手温差不多)调成酵母水,搅匀静置一会~

4酵母水一点点倒入面粉盆中,搅成絮状~

5在加入精盐(均匀的撒开)~

6揉成光滑有韧劲的面团(在案板上大致揉10分钟)~

7盖上保鲜膜放温暖处发酵至2倍大,大概1个多小时(冬天的阳台光线最好)~

8用手指沾面粉或沾水戳一下面团,不回缩不塌陷就发好啦~

9拿出面团再一次揉面,排气最关键步骤(有耐心的揉吧,能听见面团里的气泡噼啪的被挤出,尽量将空气排出,做好的馒头才没有大洞大眼的)~

10揉一会用刀切开,里面还有少许气泡~

11继续揉,直至没有气孔就揉好啦(大概揉了10分钟)~

12揉好的面团~

13擀成长方形的大片~

14刷上一层植物油~

16均匀的撒上精盐~

17从一侧卷起,卷紧、粗细一致些~

18切成大小均匀的小段~

19拿出一份,用筷子在中间压一下(如图)~

20两手稍微抻拉一下~

21两边向底卷过来,捏实~

22蒸锅倒好水,把做好的葱花卷摆在铺有屉布的蒸屉上(没有屉布的在蒸屉上抹些油)距离分开些,盖上盖子,进行2次发酵~

23发酵至2倍大时(20分钟),开蒸~

24冷水上锅蒸,大火烧开,转小火蒸10分钟(时间根据葱花卷大小而定,稍大些多蒸2分钟),蒸好焖5分钟在打开锅盖,水蒸气不要滴在葱花卷上~

25葱油小花卷来啦,咸淡适宜,葱香四溢,在配上一碗汤粥,暖心暖胃吖(切好的葱花可加一点点小苏打蒸好时葱颜色还是绿色哒)
