牛肉:
步骤
1牛里脊肉切块,去掉筋膜,多洗几次,去掉血水

2冷水上锅焯一下,倒掉带血沫的水

3冷水加葱,姜和牛肉一起煮,煮烂一些,普通锅两小时左右,高压锅半小时就可以

4煮熟的牛肉拿出来,用擀面杖擀一下

5平底锅加热,不放油,把擀烂的牛肉放锅里小火炒

6炒之前再用手撕一下,或是边炒边用铲子碾成小块

7炒到牛肉变黄,七八分干,不要特别干,要不肉松会比较硬
