小技巧
1、建议饼皮放冰箱冷藏发酵,可冷藏过夜。如果时间不够也可以常温发酵,不过冷藏发酵更松软哦。 2、饼皮建议放入一个蛋黄,成品更漂亮。 3、批萨酱一定要自己炒制,如果仅用现成的西红柿酱,那味道差的不是一点点。 4、炒制批萨酱时,可根据个人口味和放入批萨馅料的多少适量加盐,但不要加生抽。 5、炒制批萨酱一定要全程中小火慢慢收干水分,否则烤制时容易出水。 6、采用的批萨馅料如果含水量大,一定要先处理,该焯水焯水,该炒干炒干,否则烤出来的批萨湿乎乎的就大煞风景了。 7、批萨馅料的铺放一般是先大后小,摆件最后,中间铺两到三层芝士,芝士不但增香,还增加饼和馅的粘合度,我特别喜欢芝士的味道,所以放的特别足,如果不喜欢,可以适当减量。
