鸡蛋: 4个, 酸奶: 160克, 低筋面粉: 50克, 玉米淀粉: 25克, 细砂糖: 70克
步骤
1准备好所有要用的材料,蛋清蛋黄分离

2酸奶倒入盆里,低粉和玉米淀粉混合过筛到酸奶中

3用刮刀翻拌或切拌至无干粉就可以了

4先加两个蛋黄到酸奶面糊拌均匀

5再加剩下两个继续拌均匀

6拌好的面糊过筛一下更细腻些(不过筛也行,反正我过了),放边备用

7蛋清加几滴柠檬汁或白醋(反正我两样都没加,因为白醋瓶的盖子我指甲翻了那个痛),打发至鱼眼泡

8分三次加入细砂糖用高中低速打发至提起蛋头蛋白成鸡尾状,倒扣盆子无滑动

9插个小贴士:打发蛋白尽量把每个角落都打到或者打发涂中用另一把刮刀将围边的蛋白翻到中间打发

10蛋黄糊分两次倒入蛋白霜中拌至完全融合

11再倒入剩下的蛋黄糊继续拌均匀,烤箱180度预热

12拌好的面糊状态是很细腻的,一段时间内是不会消泡的

13将面糊倒入模具中,(因为原来是做古早蛋糕的,所以放了纸壳板,结果家里没有玉米油了)

14轻震模具两下震出气泡,面糊不平就用刮板抹平(我是用筷子来回划平的)

15将模具放入另一个大烤盘上,烤盘里注入凉水两碗(水浴法),放烤箱倒数第二层上火160度下火170度烘烤60分钟

16如果烤的过程中水烤干了,不用再加水!最后几分钟观察表面上色,不满意可调高温度至上色满意

17出炉后震两下震出热气,这蛋糕无需倒扣的(有几个小孔是我怕不熟用牙签戳的)
