步骤
1鸭翅放在清水中浸泡出血水,再彻底清洗干净后捞出沥干水分备用!

2鸭翅中加入玉米淀粉,料酒,生抽,蒜瓣,盐,生姜翻拌均匀腌制一晚上!

3芹菜去掉叶子切成段,胡萝卜切成片,葱白切成段备用!

4土豆削皮洗净切成1cm左右的片,放在水中浸泡!中途换几次水,去掉土豆里多余的淀粉!

5浸泡好的土豆捞出彻底沥干水分,要不然炸的过程中会溅油!

6准备好所需的调料:蒜瓣剥皮稍微拍一下即可,生姜切片,干辣椒切成段,花椒,八角,香叶,郫县豆瓣酱,肉蔻!

7锅烧热倒入适量的油烧至七成热,放入腌制好的鸭翅,中火慢慢的炸!

9把沥干水分的土豆片,一片一片的放入锅中进行炸制!

12放入郫县豆瓣酱继续小火炒出红油!

小技巧
鸭翅腌制的时候加了盐,郫县豆瓣酱和cook100麻辣香锅调料中都含有盐分,所以在做这道菜的时候不用再另外加盐了!鸭翅要提前一晚腌制,这样才更加入味儿。
