红薯: 200g, 糯米粉: 120g, 红豆沙馅: 100g, 淡奶油: 40g, 糖粉: 20g, 油: 适量, 熟白芝麻: 适量
步骤
1将红薯洗连皮洗净后,放在水中煮20分钟

2煮熟的红薯稍冷却,可轻易将皮剥开

6将面团分成等大的剂子,豆沙馅也揉成等大的小团约10克左右

8再用红薯糯米团把豆沙馅包裹起来,封后口后,小心揉圆

9将揉好的团子在芝麻里滚动,让表层沾满芝麻

11锅里放较多油,油热至微冒烟时,将芝麻球投入油中

小技巧
1.芝麻球不宜做得过大,体积太大容易造成油炸时表面焦黄,内心还不够熟的情况,而且油炸时必须注意留意观察; 2.若无淡奶油也可加入等量牛奶; 3.油炸的用油量较大,从少油角度考虑,可改成饼状,用两面煎的方式更佳; 4.红薯与糯米都不太容易消化,一次不可多食; 5.刚炸出时,外皮脆口感好,但火气很大,还是建议稍凉再进食。
