4将馅料放在一个大碗里,加少许盐、酱油、胡椒粉

5用筷子充分将调味料搅拌到馅中,腌大概半个小时左右

6腌好之后会析出水来,带上塑料手套将馅料的水分挤干,放在另一小碗里备用

7茄子洗干净,去蒂。从根那里开始切,第一刀不要切到底,第二刀切断,切好的茄盒就如右图啦

8将馅料填到茄盒里,小心码在盘子里

9用一只干净的碗,打入一只鸡蛋,鸡蛋打散后,倒上面粉和淀粉,面粉和淀粉的比例大概是2:1,加少许凉开水调成糊状

10锅里加小半锅的油,烧至油面开始有小泡泡的时候,将填好馅料的茄盒均匀裹上面糊放到油锅里中火炸至两面金黄捞出即可。记得翻面哦~
小技巧
实践证明,油炸的吃多了还真挺腻人的,如果蘸醋汁儿吃可以缓解很多哦,一顿多吃了好几个(^__^) 嘻嘻……
