草鱼: 1条, 东北酸菜: 1包约一斤, 料酒: 适量, 糖、盐: 适量, 花椒: 10粒, 葱、姜: 适量, 蒸鱼豉油: 适量, 胡椒粉: 适量, 淀粉: 适量, 香菜: 一根
步骤
1草鱼切段晾干水分,酸菜,葱姜切片和段;

2鱼段加入葱姜,料酒,蒸鱼豉油、盐,糖,胡椒粉,花椒拌匀,腌半小时让其入味;酸菜用水泡一下,冲洗几遍捏干待用.

3腌好的鱼滤去些盘中的腌汁,加入淀粉拌匀.

4锅烧热后倒入两大勺植物油,五成热时放进鱼段用中小火煎至两面金黄,感觉鱼身水分较干夹起不会碎为宜,外焦里香口感才好!

5如图一般即可,煎好的鱼盛出备用.

6煎鱼剩下的油,放入葱花姜末爆香,倒入去掉水分的酸菜煸炒一下,倒入水,水开后倒进煎过的草鱼段,盖盖大火烧开转中小火炖五分钟,放盐调味,出锅装盘即可.
