鮮山楂: 適量, 冰糖(或白糖): 適量, 水: 適量
步驟
1鮮山楂清洗乾淨

2去掉把和蒂後再切開去核

3放入鑄鐵鍋,加適量冰糖,喜歡偏甜的多加些,最後再加少量水,不用覆蓋山楂,密封性好的鍋水就再少些

4中火燒開後換中小火燜15分鐘

5關火開蓋,此時山楂已經軟爛

6倒入料理機打成細泥

7再將山楂泥倒回鑄鐵鍋中

8此時可以嘗一嘗酸甜度,覺得偏酸的可以再加些冰糖或白糖,開中火快速翻炒

9因為很容易粘底,所以一直要快速翻炒,直到看見水分進一步揮發,山楂泥體積變小

10當山楂泥粘在鍋鏟上輕易甩不下來時就可以關火啦

11在模具中刷一層薄油後就可以把山楂泥裝進去啦,此時的山楂泥已經較易成型了,裝膜後再放入冰箱冷藏會更易成型
