原料
中筋麵粉: 400g, 白糖: 50g, 精鹽: 3g, 酵母: 5g, 牛奶(清水): 120g, 雞蛋: 2個, 植物油: 20g

2雞蛋打入碗內,打散成蛋液~

3麵粉+白糖+精鹽+酵母=混合麵粉~ 倒入色拉油,雞蛋液,再一點點倒入牛奶(根據雞蛋大小酌情添加牛奶液,以免太濕潤)~ 揉成麵糰~ 蓋保鮮膜放溫暖處發酵至2倍大~

4發酵好的麵糰用手指蘸些麵粉戳個洞不回縮不塌陷就發好啦~ 案板上撒些麵粉,擀成大餅皮(最好是長方形)~ 切成均勻的條狀~ 取出一條搓成圓條~

5兩手分別向相反方向搓麵條,直至上勁~ 將麵條對摺,麵條自動就會纏繞一起~ 在繼續搓上勁,對摺纏繞,收口伸進圓的一頭即可~ 依次做好全部,不用蓋保鮮膜,晾至醒發20分鐘(表皮更酥脆)~

6鍋內倒適量油,待油溫熱放入生胚~ 轉中小火炸至,不時用筷子翻動,炸的均勻~ 炸至外表金黃酥脆~ 炸好撈出,裝盆控油~
