龍利魚: 半條, 雞蛋: 3個, 姜: 1塊, 蒜: 2瓣, 甜醋: 2勺, 生抽: 1勺, 香油: 少許, 鹽: 少許, 油: 適量

11.龍利魚解凍後沖洗一下,擦乾水分,為了有底味和肉質緊實撒少許鹽,放少許薑絲,腌制15分鐘;

22.鍋燒開水,龍利魚放入後大火蒸6分鐘;

33.晾涼後用手順肉的紋理撕成小塊;

44.把雞蛋分別將蛋清和蛋黃打入2個碗里,蛋清里放入龍利魚塊(因為龍利魚里已經有了少許鹹味,所以蛋清了不用再放鹽了)用筷子攪拌均勻,蛋黃也攪拌均勻;

55.姜蒜分別切碎末,將生抽、醋倒入小碗,放入姜蒜末,然後再倒少許香油,姜醋三合油汁就做好了;

66.炒鍋燒熱倒油,油溫7-8成熱時放入蛋清魚塊滑炒,蛋清凝結成塊後就可以盛出了;

77.炒鍋再倒少許油,將蛋黃也炒成小塊後倒在蛋清上面,澆上香醋汁(或者直接蘸料)就好了。
