主料: 母雞: 一隻, 輔料: 生抽1勺: 姜40g, 花生油50g: 香菜50g, 精鹽15g: 細香蔥50g, 麻油10g:
步驟
1將雞除毛去髒

2用鐵鍋將水煮至沸騰後,將鹽和薑片放到沸水中,同時將雞下鍋煮(水量以漫過整個雞為準)

3待水再次沸騰時改微火煮

4微火煮8分鐘(期間要將雞翻動4-5次,使雞熟透,為確認是否熟透,可用筷子插進雞肉,沒有血水流即可)

5將雞撈出,待雞涼到30度左右

6切成塊,沾上醬料即可食用

7製作醬料:把姜切成碎末,香蔥和香菜切成小段

8將備好的姜未用優質的花生油在熱鍋上爆炒一下

9加入精鹽,醬油,麻油,香蔥,香菜,再加適量煮雞的湯,燒開即可(根據各人口味,麻油,香蔥和香菜可同煮,也可以後加)
