1豆腐,新鮮四角菱,裡脊肉

2豆腐切小塊,入加鹽的冷水鍋煮開並小火煮幾分鐘。煮好後過一下冷水瀝干備用。(豆腐一定要焯水去除豆腥味,使口感更好。焯水時加鹽,豆腐不易碎。煮的時候不要用大火,也可防止豆腐被煮破)

3裡脊肉洗凈瀝干,剁成末

6菱角對半切開

7菱角倒入煮開的鍋內,轉小火燉至豆腐入味,菱角軟爛。(我用的四角菱,有脆爽的口感,如要保持脆爽的口感,可以晚一些加入菱角)
