這次做的功課比較足,參考了台灣牛扎糖的製作方法,另外小狐狸君君那兒也有詳細的做法。加上自己的理解和體會做出了約一斤半的牛扎糖。
原料
白糖 110克, 麥芽糠 220克, 熟花生 250克, 杏仁 80克, 水 40克, 鹽 1.5克, 蛋白 一個約35克, 無糖奶粉 約100克
步驟
1白糖加入麥芽糖和水先煮開

2再倒入鹽,混合均勻

4奶粉稱好備用

5熟花生放入烤箱100度預熱。杏仁也可以一起放入。花生我是整粒全部分半

6黃油切小塊室溫下軟化,手一按能一個洞

7烤箱提前鋪上矽油紙,注意不是油紙

8燒半鍋滾開的熱水蓋蓋備用

9蛋白打至硬性發泡

10糖漿煮至135-140度,這個比較熱,小心

11然後將煮好的糖漿倒入蛋白中,一邊倒,一邊攪拌

12攪拌均勻

13黃油分次加入糖漿中

14分次加比較容易。剛才8步的熱水放在糖漿下面

15黃油攪拌均勻,沒有顆粒

16奶粉也倒入糖漿中

17混合均勻後,倒入預熱的花生米,也混合均勻

18再倒入杏仁,杏仁的量看糖漿來定。我喜歡果仁多多的糖

19攪拌均勻

20倒入模具中,模具中提前鋪好矽油紙

21再在上面放一張矽油紙,用擀麵棍擀壓平,放涼

22放涼後,去掉矽油紙
