小技巧
1、清洗鱼籽时带着外面的筋膜洗,水管放小水流反复冲,免得把鱼籽冲散了,洗干净后再去除筋膜,炒时鱼籽就能炒散了; 1、凉锅凉油放葱、姜、蒜,要多放点,可以去除土腥味; 3、炒鱼籽时要一直翻动,免得嘎巴锅。
