小技巧
1、腊肉本身还是偏咸,腊肉过冷水烧开,可以去掉一些盐分,水分的进入也可以让腊肉变滋润一点。 2、花菜焯水,是为了之后炒菜可以快速炒熟,腊肉不宜多炒,不然口感会变柴。 3、辣椒最后放,因为我不太嗜辣,这小辣椒又比较辣,出锅前稍微炒一炒即可。如果喜辣,可以在放蒜末的时候,就把辣椒一起放入。
