小技巧
1、猪肉要选择好一点的肥瘦肉,肥肉和瘦肉的比例在3:7 2、肉丁一定要用面酱等调料事先腌制一段时间,这样做出的馒头才酱香浓郁 3、传统的肉丁馒头,基本都是肉,我觉得那样太腻了,就加了肉丁一半的大葱,葱被盐一拌就会出水,所以馒头馅在包之前再搅拌比较好 4、皮要擀得比包子厚一些,馅也不要放太多,否则容易塌底和收缩 5、稍微一发酵,就要上锅蒸,凉水入锅,15分钟就好,关火再焖5分钟
