原料
中粉 700g, 酵母 7.5g, 牛奶 400g, 糖 60g
步骤
1先用盆分出100克牛奶,倒入酵母7.5克,糖10克,静置几分钟。把剩余的50克糖和面粉混均,倒入静置好的酵母水和剩余的300克牛奶,揉成光滑面团

2放入盆中,盖上保鲜膜,放到温暖处发酵

3发至两倍大,手指沾点面粉,插入面团,洞口不回缩,不塌陷就说明发好了。会回缩表示没发好,再发一会。会塌陷,表示发过头了,加少许碱揉进面团,中和下酸碱性,口感差点。

4发好的面团取出,揉压排气5分钟,盖保鲜膜醒10分钟

5取三分之一面团揉至表面光滑,洒上干粉,擀成3mm厚长方形

中途切记不要揭开锅盖
