小技巧
1.山藥洗凈蒸熟後再做處理,這樣不會刺激手; 2.熟粉可以用鍋蒸,也可以用微波爐,但微波爐法更方便,但要注意隔一定時間來出來翻動一下,免得底部會糊; 3.熟糯米粉不要一次加入,要慢慢的分次混合,這樣更能掌握軟硬度; 4.山藥餅的餡料,按個人自己口味調整,將糖桂花腌制葡萄乾味道更香; 5.放入模具中要注意先要將模具中適量撒些熟粉,以免粘連;其次是麵糰大小要適中,不要太大,要不會底部不平。
