7碗內放蜂蜜和白醋,攪拌均勻成蜂蜜白醋水

9鍋內放油

10最重要的就在這一步,一不小心就會被燙了,油溫五六成熱的時候,就放入鳳爪炸

11雞爪放油里以後,馬上蓋上鍋蓋(留小縫),要用小火慢炸

12要想翻個的時候,先關火,等到鍋內沒有噼啪聲了,打開鍋蓋,給爪子翻個,再蓋上鍋蓋(留小縫),開火繼續炸(這一點雖然麻煩,但是絕對的安全)

13炸至雞爪子呈深黃色的時候

14撈出馬上泡在冷水裡,最少泡兩個小時,這樣雞爪子才會出虎皮

15兩小時以後,鍋內放底油,然後放八角和花椒
