9打一個雞蛋

10加清水適量,拌勻成麵糊糊,注意水不要多不要太稀

13清水洗幾遍,洗去表面的澱粉,這樣子藕顏色不會黑哈

15干生粉、藕片、肉餡兒都準備好

16取一片藕片,放適量肉餡,注意我建議肉餡不要太滿,四周空一點

17再取一片大小差不多的藕片蓋上去,用力壓下,合在一起,上一步肉餡放太多的話,就會溢出來,所以肉餡少點按下去就剛好

18夾好的藕夾在生粉里滾一遍,表面都粘上薄薄的一層生粉,這樣子方便掛糊掛的住哈

21粘了生粉的藕夾掛上面糊糊

22鍋中放適量油,比平時做菜多一些哈,掛了糊的藕夾入鍋

23大火一面成型後,翻面煎

24兩面都成型後,轉小火,慢慢煎到肉餡熟,可以多煎會兒,表面煎的焦黃,我是比較喜歡吃這種嫩一點的,或者一次做的多,一下子吃不完,建議不要煎的太過,嫩一點,吃的時候取幾個回鍋再煎

小技巧
1、餡兒加點生抽提鮮味 2、藕片記得不要太厚哈,然後用清水洗去表面澱粉,這樣子防止藕片變黑 3、掛糊前粘生粉一層,這樣子掛糊更容易!~ 4、麵糊糊建議用生粉,比麵粉效果好我腳的。。但是問題不大。。自己看著辦!
