原料
石磨綠豆面: 500g, 白糖: 200g, 水: 75g
步驟
1將準備好的綠豆粉過篩

2裝盆放入鍋中大火干蒸30分鐘,取出晾涼,(蒸的時候要避免水汽滴在粉上面,可以用一塊籠布包住鍋蓋)

3用擀麵杖將大塊麵粉碾碎

4再將其篩成細粉

5用水將白糖化開後,倒入豆粉中,雙手邊搓邊攪拌,達到用手一攥就成團,再一顛就散的狀態

6裝入模具壓實,專用綠豆糕模,月餅模等等都可以,我這裡用的是麻將模
