whole wheat flour /or/ Red fife flour: 225g, oatmeal-toasted: 90g, sugar: 50g, bread flour: 225g, baking soda: 9g, baking powder: 10g, kosher salt: 8g, dried apples,diced & re-hydrate in hot water & dry: 45g, raisins,soaked & dried: 45g, dates, soaked & dried: 100g, walnut,pieces,tosated: 60g, cinnamon: 6g, thyme,fresh: 10 springs, buttermilk: 500ml
步驟
1Combine all dry ingredients (except salt) together in a bowl
2Add buttermilk and mix together
3Placed on floured work surface and work of 5minutes to absorb table flour
4Divide dough in 3 equal pieces, roll into a log shape as per demo and cut.
5Brush with water, sprinkle with kosher salt, oatmeal and place on baguette pan.
6Bake in 375°F (approximately 190°C)oven for approximately 20 minutes.
