2土豆切丁

3取出適量肉餡,要肥瘦相間的,肉可以多放些,比較香

4鍋中放入適量底油,放入肉餡,將肥肉炒化即可

5放入茄子,炒至茄子變色

6放入老抽、生抽、蚝油、花椒麵,翻炒均勻

7放入土豆丁翻炒均勻,倒入適量水,末過菜略有餘即可。大火燒開後轉小火慢熬

8另起一個鍋煮麵,水開後放入麵條,再次燒開煮一分鐘,蓋上鍋蓋燜著即可
9待鹵湯汁剩的不多,轉大火,放入適量鹽,倒入水澱粉,快速攪拌(以免水澱粉結塊)鹵變得濃稠就可以關火了
10大碗中盛好麵條放上鹵就好了!多拌點鹵更香哦!
