1平魚改刀,用蔥片,薑片,料酒,食鹽腌制15分鐘

2鍋中倒入底油,4-5成熱時下入大蔥白蔥段,中小火煎至金黃色,撈出備用,並且倒出一半蔥油備用

3鍋中留1/2蔥油,7-8成熱時下入平魚,煎至兩面金黃

4將蔥段倒回鍋中,加入2勺料酒,1勺老抽,將2勺豆瓣醬倒入鍋邊的蔥油中,用蔥油炒香

5倒入剛剛沒過魚的開水(一定要開水,否則魚很腥),加入適量食鹽,多一點綿白糖調味,開蓋小火煮15分鐘
