原料
高粉200g, 全麥粉50g, 水160g, 砂糖10g, 鹽3g, 酵母3g, 黃油15g
步驟
1 準備好所有材料

2 混合除黃油外所有材料,啟動揉面,麵糰起筋膜時,加入黃油繼續揉

3 這時的麵糰不粘手,有韌性

6 放入容器內,密封好,放在約28度室溫下發酵

7 發至約兩倍大即可,用手指沾麵粉戳洞,洞口應該是不回縮不塌餡

8 將麵糰倒扣在揉面墊上

9 用手輕輕按壓排氣

11 捏緊收口,滾圓即可

12 藤籃(20厘米)內篩粉

13 將滾圓的麵糰收口朝上,放入藤籃,放進烤箱二發,溫度約35度,放熱水確保濕度
