步骤
1土鸭(不要太肥的,要肉质紧实的才经烧,越烧越香)搓洗干净,剁成均匀的块儿,沥干水分;

2沥干水分的鸭块直接放入炒锅,不放油,慢慢炒干析出来的水分,直至鸭肉变色收缩,鸭皮开始出油;

3干炒鸭块的同时:干辣椒切成节准备好青、红两种色的花椒粒,姜切片,蒜切大粒,大葱切段,豆瓣酱剁细;

4炒干的鸭肉中倒入适量熟油,炒香后,倒入干辣椒和花椒粒;
