步骤
1焯好水的牛筋清洗干净,切成小块,沥干---市场上档口卖的牛筋都是焯好水的,但会有少量渣子和皮毛,需要仔细清洗;

2新鲜春笋切除掐不动的根部,洗净,切滚刀块,焯烫几分钟去除涩味后过凉沥干;

3干辣椒和各种香料(如八角、山奈、桂皮、草果、香叶等)洗净,泡一会儿,沥干水分,和花椒粒放在一起;豆瓣酱剁细;姜拍碎,准备好独粒蒜和冰糖;

4热油下独粒蒜炸至皮黄后,放入老姜爆香;
