原料
龙虾: 1只, 鸡蛋: 2个, 西兰花: 700克(洗净切块锅内加水煮一分钟), 油: 700克(油炸龙虾用), 玉米粉: 20克, 水淀粉: 30克, 盐: 4克, 鸡精: 3克, 小葱: 20克, 生姜: 10克

1龙虾洗净,我用刷子

2拉出虾肠、取出腮叶

3用剪刀剪断龙虾头,取出虾黄装碗,再用清水冲洗一下虾头里面

4龙虾身子剁成块状放少许盐腌制一会

5两个鸡蛋打散与虾黄拌均加少许盐、适量清水拌成蛋液

6蛋液过筛到大盘里,上锅蒸熟(15分钟左右)

7锅中加水烧开放少许盐把龙虾头煮5分钟后捞出装盘备用

13蒸熟的蛋羹从锅中端出,龙虾头轻轻放在盘子三分之一处,西兰花顺盘子边摆放一圈,中间蛋羹处放龙虾肉(蛋羹上面一层虾黄)

14锅加热放少许油炒葱姜段

小技巧
蒸蛋羹选长盘就用炒菜锅蒸,因为我家里没那么大的蒸锅,所以我就直接用炒菜锅了,西兰花尽可能切成大小均匀,便于摆放美观,喜欢龙虾肉更脆更香建议在油炸龙虾肉延时,别糊掉就行
