2将蛋清和蛋黄分开,蛋清的容器要无油无水~

6打发蛋白~将细砂糖分三次加入蛋白中,打至纹路清晰,提起打蛋器有尖角即可~

7将三分之一的蛋白加入面糊,翻拌均匀~

8拌匀后倒入剩余的蛋白中~

10开灯芯火(最小火)预热平底不粘锅,锅热后刷油。 (一直用灯芯火比较容易掌握火候)

11用勺子取面糊缓缓倒入锅中,(一个饼也就是2汤勺面糊)倒入锅内的面糊在凝固之前不能随意翻动~

12盖上锅盖等2分钟

13轻轻翻面,还是2分钟(因为是纯玉米面,一定要凝固再翻面,要轻翻否则易碎)

14如果有流到一边的面糊,可以在这时候用铲子整理一下~
