猪肋排: 600g, 葱: 2片, 姜(小片): 5片, 大粒: 1粒, 肉桂: 1段, 香叶: 2片, 花椒: 20粒左右, 冰糖: 1勺, 花雕: 2大勺, 草菇老抽: 1勺, 耗油: 1小勺, 开水: 500ml, 话梅(选加): 5粒
步骤
1凉锅凉小,下排骨,焯干净血水,把排骨再用温水冲洗干净备用

2葱姜切片,准备好其他辅料

3锅内放底油,小火,放入花椒大料香叶和肉桂,小火煎香后捞出来

4不用换油,再放入葱姜,煎出香味,也捞出备用

5依然不换油,小火,放入冰糖,开始炒糖色

6炒到所有的糖冒泡泡的时候,倒入排骨

7翻炒排骨,使排骨均匀地上色

8倒回刚才的煎过的配料,大火翻炒均匀

9加入花雕,老抽,耗油,大火继续炒匀

10加入开水,大火烧开后,转小火,炖个1-2小时,我还加了几粒话梅,这个就看个人口味了,不强求

11烧到锅内水快干的时候,用筷子捡出所有的辅料,再转大火收汁,就ok出锅了!
