大葱 1根, 梭子蟹 2只, 干淀粉, 蒜片, 姜片, 料酒, 椒盐粉
步骤
1将梭子蟹清洗干净,去腮去肚脐去内脏(可请卖螃蟹的帮忙处理好)

2用剪刀将蟹剪成四小块

3切口处沾上干淀粉,将蟹大钳子用刀背拍碎,方便成熟与入味

4油锅烧至8成热,下入蟹块炸1分钟

小技巧
1、在挑螃蟹时,要选择活的,蟹脚齐全的; 2、蟹块下油锅炸之前需要控干水分,不然容易炸锅; 3、不要在油中炸太久,不然蟹肉容易老; 4、不宜多吃。特殊人群慎食。
