带皮猪肉排: , 橄榄油: , 小茴香: , 豆蔻: , 迷迭香: , 月桂叶: , 洋葱: , 红辣椒: , 大蒜: , 青花椒籽: , 白葡萄酒: , 盐: , 鸡精:
步骤
1猪排洗净,擦去表面水分, 猪皮切菱形花刀; 然后肉的那一面抹上小茴香、迷迭香、盐,按摩均匀(皮的那一面不需要) 保鲜膜包好入冰箱冷藏腌制2小时以上:

2将洋葱切小块,大蒜带皮压扁, 青花椒籽、红辣椒备用;

3豆蔻、小茴香、月桂叶、迷迭香备好;

4不粘锅入橄榄油,烧至6成热, 将带皮那面放入煎制;

5保持中小火,不能急,每一面煎1分钟,先正反面,然后再侧面,煎制表皮出现金黄的焦糖色;

6将煎至焦糖色的猪排取出, 放在铺了油纸的砧板上;

7再在猪排上铺一张油纸, 然后把煎锅压在猪排上面; PS:这样做是可以用煎锅的余温把猪排里的血水逼出来,还能起到将猪排压平整的效果,不至于卷曲难看~

8待煎锅余温散去,拿走锅, 这时血水已经排出,鲜度都锁在猪排里;

9煎锅内再加一点橄榄油,放入洋葱、大蒜红辣椒爆香;

10再倒入香料碟,炒香;

11倒入白葡萄酒;

12大火煮开盐、鸡精调味后即可关火;

13烤箱预热200度 猪排放入烤盘,倒入煮好的汤汁;

14入烤箱,180度,上层,10-15分钟, 根据肉排的大小而定;
