原料
臭豆腐: 8块, 植物油: 100毫升, 酱油: 5毫升, 干红椒末: 2勺, 香油: 少许, 盐: 3克, 味精: 2克
步骤
1将臭豆腐表面的杂质洗净,注意不要弄碎

2将洗好的臭豆腐放在盘中,置于通风处风干

3将干红椒末、盐、酱油、香油、味精调匀成蘸汁

4锅置中火上,倒油烧至六成热,将豆腐块逐个入锅中炸香炸透,待炸至豆腐呈膨空焦脆时,捞出沥油,装入盘内,再用筷子在每块熟豆腐中间扎一个眼,蘸食味汁即可(图4~图6)
