1.芹菜切成小段焯水马上过凉备用、蒜切片,姜切丝 2.鸡珍洗净,锅内烧水,把鸡珍过水焯一下,焯时加料酒去腥变色后捞出淋干水分,切成薄片 3.炒锅内倒油,放蒜片,姜丝、郫县豆瓣辣酱炒香 4.放鸡珍翻炒,适当加些酱油,再放芹菜翻炒均匀,根据口味适当的放些盐即可
