黃鱔: 3條, 料酒: 2勺, 生抽: 2勺, 玉米澱粉: 1勺, 蒜瓣: 3個, 生薑: 1塊, 干辣椒: 10克, 花椒: 10克, 郫縣豆瓣醬: 1勺, 芹菜: 3顆, 水: 適量, 耗油: 1勺, 雞精: 1勺
步驟
1這個就是孩子爺爺在老家捉的鮮活的野生黃鱔,個頭還挺大的呢!聽說野生的黃鱔最有營養,最大補了!

2找一個木板,一根鐵釘,一把鋒利的小刀!用鐵釘插在黃鱔的頭部,釘在木板上,一隻手捏住黃鱔的身子,另一隻手用鋒利的小刀劃開黃鱔的肚子,把裡面的內臟全部掏出來,最後切掉頭部!(這個黃鱔滑不溜丟的特別的不好收拾,看起來有點兒像小蛇,我也很害怕不敢親自動手,剛好樓下的老爺爺會殺黃鱔,我就請他幫我把黃鱔處理了!)

3依次處理好所有的黃鱔,再清洗乾淨!

4處理好的黃鱔切成段兒備用!(我把所有的黃鱔都處理好了切段,分成若干小份兒放在冰箱冷凍保存!吃的時候提前拿出來解凍即可!今天做的這道干煸黃鱔我用了3條黃鱔!)

5黃鱔段加入料酒,生抽和玉米澱粉抓勻,腌制20分鐘!

6蒜瓣3個去皮稍微拍一下即可,生薑一塊洗凈切片,芹菜3顆去掉芹菜葉洗凈切成段兒,干辣椒10克,花椒10克,郫縣豆瓣醬1勺備用!

7鍋燒熱倒入適量的油燒至七成熱,放入腌制好的黃鱔段中火慢慢的炸!

8炸至黃鱔段呈金黃色即可撈出瀝干油分備用!

9鍋燒熱倒入適量的油,放入生薑,蒜瓣,花椒,干辣椒炒出香味兒!

10放入郫縣豆瓣醬炒出紅油來!

12加入一勺耗油,放入適量的水大火煮開後轉小火慢慢的燉煮!(水不要放太多,剛好淹沒住黃鱔即可!)

小技巧
郫縣豆瓣醬很咸,蚝油裡面也含有鹽分,燒這道干煸黃鱔的時候,不需要另外再加鹽!
