豬肚: 1個, 蘿蔔: 1個, 大蔥: 1根, 鹽: 1包, 酒: 適量
步驟
1豬肚用水清洗一下

2加鹽抓揉,把豬肚表面黏黏的東西弄下來,反覆幾次

3表面有黃色的東西儘量刮掉,刮不掉沒有關係

4把豬肚翻身

5裡面的脂肪用剪刀剪乾淨

6去除感覺後沖洗一下

7加入鹽反覆揉捏,沖洗乾淨

8蘿蔔去皮,大蔥洗乾淨

9蘿蔔切塊,大蔥切段,生薑切片

10取適量的蔥,姜,蘿蔔放到豬肚裡面 ,留一半另用

11然後加水,放蔥,姜,蘿蔔焯一下

12煮開了加酒去腥

13焯好以後放涼

14把豬肚翻個面,那個黃色白色的東西要刮乾淨

15要弄成這個樣子,然後沖洗乾淨

16把豬肚翻面跟剛才一樣,豬肚裡面塞蔥姜蘿蔔八角,放在那個高壓鍋裡面

17加入一勺到兩勺鹽,還有適量的白酒,高壓鍋冒氣後十分鐘,關火繼續燜壓

18把豬肚撈出來以後切片或者切絲都可以

19之前放過一點鹽,但是味道還不是特別咸,所以可以拿一點鮮醬油放點麻油沾著吃,我家就是這樣吃的

小技巧
因為豬肚的味道比較重,所以我一般用蘿蔔和大蔥去味,高壓鍋壓制的時候可以加點八角,這樣去腥味提香的,我不太喜歡用料酒,可以用白酒比較多
