原料
草魚: 1條, 東北酸菜: 1包約一斤, 料酒: 適量, 糖、鹽: 適量, 花椒: 10粒, 蔥、姜: 適量, 蒸魚豉油: 適量, 胡椒粉: 適量, 澱粉: 適量, 香菜: 一根
步驟
1草魚切段晾乾水份,酸菜,蔥姜切片和段;

2魚段加入蔥姜,料酒,蒸魚豉油、鹽,糖,胡椒粉,花椒拌勻,腌半小時讓其入味;酸菜用水泡一下,沖洗幾遍捏干待用.

3腌好的魚濾去些盤中的腌汁,加入澱粉拌勻.

4鍋燒熱後倒入兩大勺植物油,五成熱時放進魚段用中小火煎至兩面金黃,感覺魚身水份較干夾起不會碎為宜,外焦里香口感才好!

5如圖一般即可,煎好的魚盛出備用.

6煎魚剩下的油,放入蔥花薑末爆香,倒入去掉水份的酸菜煸炒一下,倒入水,水開後倒進煎過的草魚段,蓋蓋大火燒開轉中小火燉五分鐘,放鹽調味,出鍋裝盤即可.
