簡介
Semifreddo是義大利繼Gelato之後的又一種新興甜品,Semifreddo意思是半冷,部分冷凍,是冰淇淋又是蛋糕~ 1cup=236ml 模具的尺寸大概是11cm*22cm 配方來自Martha Stewart
原料
砂糖 1/2cup, 檸檬汁 1/3cup, 檸檬皮屑 1大匙, 蛋黃 4個, 黃油 70g, 藍莓 3/4cup, 砂糖 2大匙, 淡奶油 2cup, ladyfinger(手指餅乾) 若干
步驟
1先做檸檬醬(Lemon curd),將1/2cup砂糖、檸檬汁、檸檬皮屑、蛋黃和切小塊的黃油放入奶鍋中,小火邊加熱邊攪拌,直至變濃稠,過篩至隔冰水的盆中冷卻

2將兩張保鮮膜鋪在模具中,可以噴些油輔助固定,四周要留出適當的寬度

3將藍莓和糖放入攪拌機

4攪拌至成均勻的果醬液,可以中間用刮刀輔助刮一下壁

5過篩

6淡奶油打至7分發

7加入檸檬醬,刮拌均勻

8模具中加入一半的奶油檸檬醬,用刮刀抹平

9用手指餅乾表面蘸滿藍莓醬汁,鋪在模子中,如果醬汁有剩餘,也一起倒在模子中。

10將剩餘的奶油檸檬醬加入,刮刀抹平

11將模具外的保鮮膜反過來蓋上,冰箱冷凍8小時至冷凍
