原料
圆茄子: 4个, 蒜: 6头, 青椒: 1个, 香菜: 3根, 盐: 4汤匙, 陈醋: 3汤匙, 酱油: 2汤匙, 味精: 少许, 香油: 1汤匙
步骤
1将茄子从顶端向下切一刀,蒂连着不要切断。蒸锅内注入水,放上蒸屉和笼布,热气上来后将茄子放好,加盖约20分钟,用筷子戳一下,轻松戳透即可

2将蒜剁成茸后调入陈醋、香油、味精和1茶匙盐,搅拌均匀后备用

3将香菜切碎,青椒切丝备用,用筷子在茄子里面竖着划两下,将调好的蒜泥和香菜、青椒丝用勺子抹在里面

4上下都要抹均匀后将茄子合起来,在表面抹盐,同样上下都要抹均匀

5在茄子表面抹上蒜泥,再放少许香菜和青椒丝
