步骤
1我家人口多,这里用到了一斤多的明虾,大家可以根据人口还有海鲜的喜爱程度随意放,虾洗净,掐头去虾皮;

2虾头留着,一会留着煸虾油,煸出的汤特鲜,颜色也特好看;

3拿牙签在虾的尾背挑出虾线;

4把虾切成粗粒,然后再拿刀背轻剁成虾蓉;

5加入适量蛋清、盐、料酒调味;

6倒入少许淀粉,四根筷子顺时针用力搅拌,使虾蓉变稠;

7烧一锅开水,水沸拿勺子作为容器,把虾丸滑到水里,待虾丸变色捞起;过一下冰水(可以提前接一大碗水放冰箱冷藏),这样会使虾丸口感更加有弹性;

8半截白萝卜打成细丝,切几片姜片;

9锅里油烧热放虾头,这时候转小火,拿铲子按压每一个虾头,把虾脑全部挤压出来,可以添少许水煮个两分钟,然后拿笊篱把虾头过滤出来留虾汤在锅里

10再加合适的水烧开,放入姜片、白萝卜丝,沸腾后加入虾丸,小火慢炖10分钟;

11出锅前加入适量盐、白胡椒粉调味,盛碗再撒点小葱碎点缀;
