7碗内放蜂蜜和白醋,搅拌均匀成蜂蜜白醋水

9锅内放油

10最重要的就在这一步,一不小心就会被烫了,油温五六成热的时候,就放入凤爪炸

11鸡爪放油里以后,马上盖上锅盖(留小缝),要用小火慢炸

12要想翻个的时候,先关火,等到锅内没有噼啪声了,打开锅盖,给爪子翻个,再盖上锅盖(留小缝),开火继续炸(这一点虽然麻烦,但是绝对的安全)

13炸至鸡爪子呈深黄色的时候

14捞出马上泡在冷水里,最少泡两个小时,这样鸡爪子才会出虎皮

15两小时以后,锅内放底油,然后放八角和花椒
