原料
低筋麵粉: 150克, 黃油: 100克, 水: 25克, 細砂糖: 3克, 蛋黃: 6克, 鹽: 1.5克, 全蛋: 1個, 淡奶油: 100毫升, 糖粉: 55克, 青檸: 1個
步驟
1蛋黃和水攪打均勻,再加入細砂糖和鹽攪打均勻後放冰箱冷藏;

2黃油室溫軟化;

3篩入低筋麵粉,用刮刀攪拌至無乾粉狀態;

4麵糰中加入冷藏的蛋液,揉成光滑的麵糰後用保鮮袋包裹住,放冰箱冷藏5個小時以上;

5取出撻皮,放在油紙中間,用擀麵杖擀成長方形;

6把麵糰鋪在蛋撻模里,使撻皮貼合模具,除去多餘的撻皮,用叉子或牙籤在撻皮上叉些小孔,放進烤箱中180°C上下火烤20分鐘;

7準備內餡材料;

8用刨刀刮出青檸皮屑,取檸檬汁,和全蛋、淡奶油混合均勻,過篩2遍,青檸餡就做好了;

9將青檸餡倒入烤好放涼的撻皮中里;

10重新放入烤箱中層,160°C上下火烤30分鐘,直到派餡凝固即可。
