原料
皇上皇二八臘腸: 1-1.5根, 糙米: 60g, 大米: 110g, 香菇: 3-5朵, 栗子: 6-8顆, 海米: 20粒, 炸洋蔥酥粒(可省): 8g, 雞蛋: 2顆, 黃瓜(或蔬菜): 2條(適量), 油: 1勺, 白芝麻(可省): 1小撮, 生抽: 2勺, 白糖: 1勺, 魚露(可省): 3ml
步驟
1準備山海臘腸燜糙米飯所需要的原材料;

2皇上皇二八臘腸是二分肥八分瘦噠,相對沒有那麼容易胖;

3香菇、蝦米分別洗凈泡發,糙米淘洗後用熱水浸泡,白米用冷水浸泡1小時;

4皇上皇二八臘腸切片,不要切太薄,3mm左右比較有口感;

5泡發好的香菇切絲,板栗蒸熟後用刀把碾一下,略切丁;

6兩種米浸泡完畢混合併瀝干水分,加泡發香菇和蝦米的水,約190ml(實際水量根據自家米的吸水程度調整);

7將米放入砂鍋,加入切好的香腸片、香菇絲、海米和栗子碎;

8蓋上砂鍋蓋子,大火煮開後轉小火煮約5分鐘;

9期間將醬汁材料混合燒開放涼待用;

10煮至水分基本干,米飯中間有孔洞時加入洋蔥酥,在鍋邊淋一圈油,一勺就夠了,這樣有助於結鍋巴,打兩個土雞蛋,蓋上鍋蓋小火燜片刻後關火;

11直到雞蛋凝固到想要的口感,我喜歡半熟溏心,大概燜5分鐘;

12淋上煮好的醬汁;
