2雞蛋打散成蛋液,蔥切段蒜切末(切些蔥綠葉末隔開裝)~

3將茄子洗凈去皮,切成厚片,中間在切一刀,全部切好裝盤~

4茄子均勻的裹上蛋液,放入熱油鍋里炸,轉中小火炸至兩面金黃,撈出裝盤備用(炸油倒出)~

5鍋內留少許底油放入蔥段蒜片八角炒香~ 加入精鹽,雞精,十三香,生抽,糖醋~ 倒入炸好的茄子,翻炒均勻,倒入清水~轉大火收湯即可~
