原料
雞蛋: 1隻, 豬肉餡: 300g, 蔥: 一根, 鹽: 2克, 茄子: 2個, 麵粉: 適量, 澱粉: 適量, 泡打粉: 1克, 胡椒粉: 1克, 料酒: 1湯匙
步驟
1把肉餡剁好,放蔥花,料酒,鹽,胡椒粉後攪拌均勻

2切茄子,儘量選擇粗點的茄子,大概一片5毫米厚度,一刀不切到底,另一刀切到底

3調麵糊,麵粉和澱粉比例3:1,打一個雞蛋,把蛋黃放麵糊里,蛋清免得浪費直接放進肉餡里,加些水,調成糊狀

4接著便是把肉夾到茄子裡,藕可以用相似做法,就是藕盒

5把油燒到7成熱,轉小火,茄盒外裹上面糊,下油鍋炸至金黃色,最後用吸油紙吸干多餘的油
