1麵糰的做法:將高筋麵粉、黑麥粉、細砂糖、奶粉、鹽分別稱好,放入和面機攪拌盆里混合拌勻;

2加入用溫水調好的酵母水慢速攪拌2分鐘,快速攪拌至打出麵筋(注意酵母不與糖、鹽放在一起,以免酵母脫水失效);

3加入軟化後的黃油,慢速攪散黃油,快速攪拌至麵糰光滑;

4加入黑麥粉的麵糰攪拌得不能太上勁兒,欠一點為好;

5將打好的麵糰放入容器中,蓋上保鮮膜,放在溫暖處醒發;

6醒發至兩倍大;

8取一個麵糰用手壓扁,用排氣擀麵杖從麵皮中央開始朝上朝下擀成橢圓形的麵皮。

9翻面後從上向下卷;
